Breakfast Burrito

After a weekend of binge eating (and the shock of getting weighed this morning) it is time for me to be good again, otherwise I will just continue to get fatter and fatter – and fatter again.

I knew it would be a bad gain.  I also knew that I would feel like shit about it and want to do well on my diet for a while.  With these facts rattling around in my head, I got home from work last night and set to a cooking frenzy.

If I don’t meal prep in advance, I will not get very far.  I make terrible choices when given the opportunity.  Additionally I am, quite frankly, far too lazy to be cooking good and healthy things on a daily basis.  It’s sad, but it’s the truth.

The other thing I know about me is that after a binge like I’ve just been through, I need more than fruit and yogurt for breakfast.  I need something tasty, hot and something that feels a bit naughty!

This is a really easy recipe and it feels marginally patronising to post it, but then I was thinking about it and sometimes your head doesn’t allow you to connect the easy dots.  I have on several occasions not had a clue what I could make with the ingredients in my fridge and cupboard, but then a random blog post or Instagram picture will come along and it’s like the lights go on.

I had planned on making these and blog about them, but there was rather a lot going on in my apartment.  Our new curtains were being hung and that of course meant that I had to check literally every 5 minutes what was happening.  Not because I am controlling, but because they were calling me to do so.  The knock on effect of this was that the photos I was planning on taking for this post were forgotten until this morning when I started to type.

This post won’t be as pretty but the burritos will be tasty if you try them, that I promise!

Ingredients

  • Steak
  • 6 Eggs
  • 1 Onion (I used white)
  • 1 Red pepper
  • Mushrooms
  • 120g Light Cheddar Cheese
  • 6 Wraps
  • Fry Lite

Method

  1. Season and cook the steak to your liking.
  2. Let the steak cool slightly, and then dice.
  3. Dice the vegetables, and cook.
  4. Cook the eggs as you prefer for scrambled eggs.
  5. Combine eggs, vegetables and steak.
  6. Heat the tortilla slightly to soften them.
  7. Put the egg/steak/veggies in the middle, and sprinkle with cheese.
  8. Roll the burrito and press in George Foreman/panini grill.
  9. Roll the additional burritos and roll in foil.
  10. Serve and enjoy!

OR…..

Re-heating

Preheat oven to 180 Celsius, and put foil package in the oven for 10-15 mins, depending on how big it is.

Additional Information

This made 6 burritos.  You could probably make 4 and fill them out a bit better if using a tortilla with wheat flour.  I used gluten free which they are less pliable so you have to be careful about how much you put in them.  It’s syn free and it uses one HEXB and half a HEXA per serving.  One burrito is one serving.
